A healthy alternative.
Although avocados and avocado dishes are popular in many countries, more and more people are considering the environmental pollution and economic exploitation associated with its cultivation. Therefore, below you will find a version of guacamole that does not require avocado, but can be prepared from ingredients grown in most gardens.

Ingredients
• 300 g green peas (fresh or frozen)
• 1 finely chopped or crushed clove of garlic
• 3 tablespoons of vegetable oil (e.g. olive or sunflower oil)
• 1 organic lime
• ½ tsp cumin
• ½ bunch of coriander (can be replaced, for example, with basil)
• salt and pepper
Preparation
1. Add the green peas, garlic and oil to a pot and add enough water to cover completely. Cook on low heat for about 5 minutes until soft. Pour off the cooking water and set aside.
2. Puree the cooked peas. Add enough tablespoons of cooking water to achieve the desired creamy texture. If you want a more intense garlic flavor, add more fresh garlic.
3. Grate the rind of the lime and squeeze out the juice. Add both the grated rind and the juice to the puree along with the cumin and chopped coriander. Season with salt and pepper.
